Labor Day Follow up + My Yummy Clean Salad

Good Morning!  I was able to sleep in until 8:00 this morning and it felt glorious!  I am so sore from my workout yesterday that a little extra sleep did wonders for me.  I plan on getting my cardio workouts in while my little one naps today.  Sleep is very important for muscle recovery, so I listened to my body and didn't push myself to get up early today.  What are your workout plans for the day?

Labor Day Snack Spread
I hope that you had a nice and relaxing Labor Day and were able to do some of the things you enjoy!  We had a little family BBQ and I wanted to make sure that 90% of the food we had were clean and healthy eats.  We served organic beef burgers, two kinds of salad, pumpkin chips with hummus and salsa, fruit and cheese plate, zucchini lasagna (made by my mom, I'll get her recipe to share!), and there were a few "indulgent treats" too!  For the most part I ate clean, I will admit I had a cookie, but I didn't drink anything but water and felt good at the end of the night.  Inspired by the summer salad recipe from last week, I made my own and it was so good it went quickly!  I plan on making another batch to have on hand this week to eat with my chicken.  What kinds of foods did you have at your BBQ?  Were you able to stay on track?


Angelena's Clean Eating Salad 
1 medium cucumber diced
3 Roma tomatoes diced
1 ripe avocado diced
8 oz. small fresh mozzarella balls
3 tbsp Balsamic vinegar
2 tbsp EVOO
5 basil leaves chopped
Salt and pepper to taste
Instructions: add all ingredients to a large bowl and toss together
put in fridge for 20 minutes. 
Serve and Enjoy!
